Experience the Flavor of Ras Malai

        Ras Malai is one of the most popular desserts in the Indian subcontinent. This dish is believed to have originated in Odisha, West Bengal or Bangladesh. In India, it can be found in every sweet shop in the states of Odisha, West Bengal, and Bihar. It is seldom pronounced as Roshomalai in Bengali. In Bangladesh, Ras Malai is very popular in Comilla. Ras Malai consists of sweet, cream to yellow-colored dumplings of cottage cheese soaked well in stiffened cream. The stiffened cream is nothing but thickened, sweetened milk delicately flavored with pistachios, rosewater, saffron, and cardamom. The name Ras Malai comes from Ras (means ‘juicy’) and Malai (means ‘cream’). Be it is scorching heat or chilling winter, Ras Malai is too difficult to resist and obviously not to be missed. 
One can easily prepare delicious Ras Malai according to the following recipe:



Ingredients:
- Half milk: 32 oz
- Blanched almonds: ½ teaspoon
- A pinch of saffron
- Sugar: ½ cup
- Crushed green pistachios: 2 teaspoon
- Ricotta cheese: 2 lbs
- Crushed cardamom seeds: ¼ teaspoon

Preparation:
- Mix the cheese with sugar with little cardamom powder, and fan out the mixture on a baking tray.
Bake the combination at 350 degrees for 35 minutes or until it sets. Anyway, make sure it does not get brown.

- Remove the tray from the oven, cool it at room temperature, and then cut the set mixture into 2 inches small squares.

- Place these squares in a dessert bowl. 

- Blend the other ingredients, baring the pistachios, well in a separate dish, and pour this liquid over the squares.

- The dessert is ready. Decorate it with pistachios, freeze for 2-3 hours before serving.
