Rajma recipe is south Indian recipe basically it is a popular vegetarian curry .This scrumptious dish is usually served with fried or boiled rice .The making of rajma is easy and any one can make this recipe by following this instruction There are many distinguish ways of cooking this dish which is because of the regional divergence. Well here’s one recipe that I think most of you will like to try at least once.
Ingredients:
• Rajma One cup
• Two large cloves
• One stick (cinnamon)
• bay leaf one peace
• One table spoon of oil
• One table spoon of butter
• Cumin seeds one table spoon
• One table spoon turmeric powder
• Cumin powder one table spoon
• Garam masala one table spoon
• One chopped onions
• Table spoon of ginger garlic paste
• Tomatoes one cup
• Salt as required.
Procedure:
1. If you wish to cook rajma the first thing you need to do is soak the red kidney beans (which is the main ingredient in rajma) for at least eight hours. You can easily do that the night before you do the cooking. The beans will appear double its size if soaked properly.
2. Now in a pressure cooker cook this soaked rajma for 3 to 4 minutes in water. Boiling rajma with butter and salt in a pressure cooker will make them softer. Don’t throw the stock away, we need it for the gravy.
3. In a pan heat oil then fry cloves, stick, bay leaf for few minutes. Then add the chopped onions to the pan and cook further for 3 minutes.
4. Now add the paste of ginger and garlic in the pan and fry till you see it turns brown. Then add remaining ingredients -turmeric powder, chopped tomatoes, garam masala ,cumin powder, and then cook again for some times until the tomatoes comes as pulpy .
5. Add the previously boiled (with salt and butter) rajma in the pan and cook it for three or four minute. There you have your dish ready. Serve it according to your taste of decoration.
